Here's the recipe I use to make my fudge brownies, adapted from a Gold Medal children's alphabet cookbook.
Mix together dry ingredients:
2/3 c. flour
3/4 c. sugar (go easy on it)
1-2 Tbsp. cocoa powder (for baking, not hot chocolate)
1/4 tsp. salt
1/4 tsp. baking powder
A small handfull of semi-sweet chocolate morsels
Then add "wet" ingredients:
1/2 tsp. vanilla
2 eggs
1/4 c. (4 Tbsp./half a stick) butter or margerine
1 c. (at least) semi-sweet chocolate morsels, melted
Add 1/2 tsp. of vanilla and 2 eggs. Mix pretty thoroughly.
Melt about 1 Tbsp. butter in a 2-cup glass measuring cup (microwave 20-30 seconds). Add 1 cup chocolate chips (roughly--be liberal), then remaining 3 Tbsp. butter (all in same cup).
(Melting some of the butter first insures that the chocolate chips won't burn on the bottom. Total microwave time is about 1 min. 30 secs.)
Stir everything very thoroughly; batter should be fairly wet (not stiff) but heavy and a very dark brown color. Add some chocolate chips (not melted) and mix in; then pour into 9"x9" (square) greased-bottom-only pan. You can use a slightly longer pan for thinner brownies to stretch the recipe.
